  • It’s a broadly used process which minimizes the risk of the presence of pathogenic bacteria in the product.
  • It’s the traditional way. During milk processing we only add rennet and milk enzymes. Live milk enzymes are probiotic organisms, which help regulating intestinal activity.
  • Yes, all Boriati products are gluten-free (even our ‘julienne’, mozzarella cheese for pizza, does not contain anti-agglomerants)
  • It is a process of heat treatment for the raw milk. It consists in increasing milk temperature up to about 72-75° C and hold it stable for about 30 seconds. This is intended to minimize the risk for health by eliminating heat-sensitive bacteria which may be present in raw milk.
  • No preservatives or food additive is added to our products. The ingredients of the whole range of products are: pasteurized cow’s milk, milk enzymes, rennet and salt.
  • Proteins, fats, carbohydrates and minerals are essential elements in a healthy diet. The proteins provide essential amino acids, fats provide the energy we need, carbohydrates are essentially lactose, which plays an important role in the body as the galactosidic residue is involved in the biosynthesis of some components of the nervous system and promotes calcium and zinc absorption.
